Icing:

powdered sugar

Instructions
Preheat your oven to 400°F (200°C). Line baking sheets with silicone mats and set aside.
Cream together the butter and sugar in an electric mixer fitted with the paddle attachment until light and fluffy, about 3 minutes.
Add the eggs, milk, and vanilla extract to the butter-sugar mixture, and mix until well combined.
Incorporate the baking powder, baking soda, and flour gradually into the wet ingredients, blending until a soft dough forms.
Shape the dough into ropes of about one tablespoon each, and twist them into desired shapes on the prepared baking sheets.
Bake for approximately 10 minutes, or until lightly golden. Remove from the oven and allow to cool completely on a wire rack.
Prepare the icing by mixing together powdered sugar, milk, and vanilla extract until smooth.
Dip the tops of the cooled biscuits into the icing, allowing any excess to drip off. Add sprinkles for a festive touch, if desired.
Let the icing dry completely before storing the Italian Soft Biscotti in an airtight container.
Notes
Add sprinkles and ice on the day of serving or else the sprinkle color will bleed into the icing.
