Easy Fall Baked Apples

These Granola Stuffed Baked Apples are the perfect fall treat, whether you’re enjoying them for breakfast or dessert.

Ingredients

  • 4 small to medium baking apples tops cut off and reserved, cored and hollowed out
  • 5 T granola adjust based on size of apple
  • 2 T raisins plus dried fruit as desired
  • 2 T nuts chopped, optional
  • 1 t ground cinnamon
  • 4 t unsalted butter
  • Drizzle of honey optional
  • Optional: Crème fraiche or ice cream for serving

Instructions

  • Preheat your oven to 375°F.
  • In a bowl, combine the granola, raisins, nuts, and cinnamon. Mix well, and if you want a touch of sweetness, drizzle honey into the mixture.
  • Place your cored apples in an oven-proof baking dish, and proceed to fill each apple with your granola mixture.
  • Top each apple with a teaspoon of butter and transfer to the oven.
  • Bake for 30-40 minutes or until the apples are soft and sticky.
  • Once done, remove from the oven and allow them to cool briefly.
  • Serve them warm with a scoop of crème fraiche or ice cream, and enjoy!
