Easy Blackberry Pear Cobbler

Warm, comforting Pear and Blackberry Cobbler with a buttery crust, juicy pears, and tart blackberries. Perfect served with vanilla ice cream or whipped cream.

Ingredients

  • 2 medium pears thinly sliced
  • 2 cups fresh or frozen blackberries rinsed and drained
  • ½ cup + 3 tablespoons sugar divided
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ cup butter or coconut oil melted
  • 2 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • Vanilla ice cream or whipped cream for serving

Instructions

  • Preheat your oven to 350° F. Lightly grease a large casserole dish.
  • In the prepared dish, combine the pears and blackberries. Toss with 3 tablespoons of sugar, cornstarch, and lemon juice, making sure all the fruit is evenly coated.
  • In a medium bowl, whisk together the flour, baking powder, and remaining sugar. Stir in the melted butter, milk, vanilla, and salt until a thick dough forms.
  • Drop spoonfuls of the cobbler dough over the fruit, covering as much as you like—it doesn’t have to be perfect!
  • Bake for 25–30 minutes, or until the fruit is bubbling and the topping is golden brown.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For extra flavor, sprinkle a little cinnamon or nutmeg over the fruit before adding the topping, or drizzle honey over each serving for a sweet finish.
