Chicken Lettuce Wraps

Ingredients

  • tbsp sesame oil
  • 1 tsp minced garlic
  • 1 tbsp fresh minced ginger
  • 8 oz ground chicken
  • ¼ cup soy sauce
  • 2 tbsp Thai sweet chili sauce
  • Juice of 1 lime
  • 1 tsp honey
  • ¼ cup chopped cashews
  • 1 cup fresh broccoli slaw
  • 1 tsp sesame seeds
  • 6 leaves of butter or romaine lettuce rinsed and dried

Instructions

Prepare the Flavor Base:

  • Heat sesame oil, garlic, and ginger in a medium skillet over medium-high heat until golden and fragrant, about 2 minutes.

Cook the Chicken:

  • Add ground chicken to the skillet. Break it apart with a spatula as it cooks until no longer pink.

Add Sauce and Flavor:

  • Stir in chopped cashews, soy sauce, Thai sweet chili sauce, lime juice, and honey. Reduce heat to low and cook for 3 minutes, allowing the flavors to meld.

Incorporate Broccoli Slaw:

  • Remove the skillet from heat and let it cool for a couple of minutes. Stir in fresh broccoli slaw until well combined.

Assemble and Serve:

  • Spoon the chicken mixture onto each lettuce leaf. Sprinkle with sesame seeds for added crunch and flavor.
