7 Layer Dip Cups – Game Day Appetizer

Tailgating, football, or just munching while cheering on your favorite team—these 7 Layer Dip Cups are the perfect handheld appetizer!

Ingredients

Guacamole Ingredients

  • 2 large ripe avocados
  • 2 large cloves garlic finely minced
  • 2 tbsp fresh lime juice
  • Sea salt and pepper to taste

Remaining Ingredients

  • cups sour cream
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • Sea salt and pepper to taste
  • cups refried beans
  • 1 pint cherry or grape tomatoes chopped small
  • 1 cup 4-cheese Mexican blend finely shredded
  • 1 15- oz. can black olives drained and chopped small
  • 3 large green onions green parts only, thinly sliced

To Serve: Gluten-free tortilla chips

Instructions

  • Make the guacamole: Slice avocados in half, remove the pit, and scoop the flesh into a bowl. Add minced garlic, lime juice, salt, and pepper. Mash with a fork until smooth. Cover and set aside.
  • Season the sour cream: In a separate bowl, combine sour cream, chili powder, cumin, garlic powder, salt, and pepper. Stir until well mixed.

Assemble the cups:

  • Add about 2 tablespoons of refried beans to the bottom of each 5-oz. appetizer cup.
  • Top with 2 tablespoons of guacamole, followed by 2 tablespoons of the seasoned sour cream.
  • Add 3-4 small chopped cherry or grape tomatoes.
  • Sprinkle 1 tablespoon of shredded cheese, 3-4 chopped black olives, and a few green onion slices.

Optional garnish: Add a gluten-free blue tortilla chip to each cup for an extra festive touch.

  • Serve immediately with extra tortilla chips on the side and watch them disappear fast!
