Ingredients

  • 2 firm avocados (ripe, but still firm)
  • ½ cup almond flour
  • 5 tablespoons finely grated parmesan cheese
  • 1 teaspoon garlic powder
  • 2 teaspoons Italian seasoning
  • 1 egg
  • 2 teaspoons water
  • Salt and pepper, to taste

For the garlic-parsley mayo:

  • ½ cup mayonnaise
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • ¼ cup fresh parsley, chopped
  • Salt and pepper, to taste

Directions

  1. Prep the oven and avocado:
    Preheat your oven to 450°F (230°C) and line a rimmed baking sheet with parchment paper. Peel and halve the avocados, then slice each half into 6 wedges—24 wedges total.
  2. Make the coating:
    In a shallow dish, combine almond flour, parmesan, garlic powder, Italian seasoning, and a pinch of salt and pepper.
  3. Set up the dip:
    In a small bowl, whisk together the egg, water, and a pinch of salt and pepper.
  4. Coat the avocado wedges:
    Dip each wedge into the egg mixture, then coat it in the almond-parmesan mixture. Make sure every wedge is nicely covered. Place them on the prepared baking sheet.
  5. Bake the fries:
    Roast for 6 minutes, flip, then bake another 5–6 minutes until golden and crispy. Let them cool 2–3 minutes on the tray.
